I had great Christmas cake expectations for myself. But my two beautiful boys kept me busy this season....so for a last attempt at Christmas baking, I cheated on these cupcakes!! The idea for these came from Sweetapolita. No surprise there. :) I followed her double chocolate recipe for the cupcakes....they are very much a rich brownie sort of cupcake. The only change I made was that I added cinnamon to the recipe. I love a hint of cinnamon whereever I can squeeze it in! These are decadent cupcakes, so if you are an extreme chocolate lover (which I am not, but I still thought they were great) I encourage you to make these!
The toppers are gingerbread cookies hand-dipped in dark chocolate.
I added some sprinkles and disco dust just to pretty them up a bit.
And poof! Instant (and simple) holiday treats!
The gingerbread Swiss meringue buttercream was my favorite part. I think I could sit there all day just eating it straight out of the bowl. No cupcakes necessary!! :D
